Title : Dietary Intake of Urea from Puffed Rice (Muri) in Bangladesh

Abstract : Puffed rice (Muri), a popular snack has taken an important place as a volumetric food in the diet of diabetic and obese patients in Bangladesh. Urea adulteration in puffed rice processing has become a concerned issue in general people. Urea generally has low toxicity in human as it is an excreted metabolite though prolonged ingestion of high levels of urea may develop and worsen pathological conditions. This study has undertaken to determine the urea level in different samples of puffed rice available in Bangladeshi market. Moreover, the present study tried to determine the effect of ingested urea through puffed rice in human. The results suggest that most of the renowned companies didn’t use urea in puffed rice processing whereas the amount of urea in urea-containing puffed rice docs does not show any health-related concern for the healthy individual.
